Crispy goat cheese

Ingredients for 2 servings:

  • 200 g goat’s cheese (roll)
  • 2 tbsp rosemary
  • 2 tsp honey
  • 4 tbsp nuts, mixed or trail mix without raisins)
  • 5 ¼ tsp chili flakes
  • 1 tbsp balsamic vinegar
  • 2 tbsp oil (walnut oil)
  • some sea salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the goat cheese roll into 4 slices and place on 2 ovenproof plates. Roughly chop the rosemary and sprinkle over the cheese. Drizzle with honey. Bake in a preheated oven at 250°C (480°F) on the second rack from the top for about 4 to 5 minutes (convection oven not recommended). Roughly chop the nuts or trail mix. After 2 minutes, sprinkle over the cheese slices and bake. Whisk together the chili flakes, oil, and balsamic vinegar. Sprinkle the cheese slices with a little coarse sea salt and serve in the sauce. Serve with raisin bread toasted in rosemary butter.
