Ingredients for 1 servings:
- 250 g cocktail tomatoes, red, yellow, orange
- 125 g mini mozzarella
- 25 g rocket
- 1 pinch of Dijon mustard
- 1 pinch(s) coconut blossom sugar
- some herb salt and pepper, freshly ground
- 1 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
Instructions
Working time approx. 10 minutes; Rest time approx. 5 minutes; Total time approx. 15 minutes
Combine the dressing ingredients in a bowl and mix thoroughly. Wash the arugula, drain on a paper towel, and then chop it slightly. Wash the tomatoes and halve or slice them depending on their size. Place the mozzarella in a sieve and drain. Add all ingredients to the bowl with the dressing. Mix well and let it marinate for 5 minutes.
