Ingredients for 4 servings:

  • 400 g flour
  • 2 eggs
  • 125 ml water
  • 200 g bacon (belly bacon)
  • 6 tsp butter
  • 150 g sour cream
  • 200 g low-fat curd cheese
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 40 minutes; Rest time approx. 20 hours; Total time approx. 20 hours 40 minutes

Knead flour, eggs, water, and salt into a firm dough and let it rest for 20 minutes. Then roll out thinly and cut into 5-7 cm diamonds. Let it dry for 10 minutes. Meanwhile, finely dice the bacon and fry in a pan. Bring salted water to a boil and cook the dough diamonds for 2-4 minutes. Then refresh in cold water. Drain well. Melt butter in a pan and fry the pasta pieces in it. Stir in the sour cream. Crumble the quark with a fork and season with salt, pepper, and nutmeg. Sprinkle the bacon and quark over the pasta pieces and mix everything together.
