Cutlets topped with cheese

Ingredients for 4 servings:

  • 4 pork chops, 180 g each
  • n. B. Salt
  • n. B. Pfeffer
  • 1 tbsp clarified butter
  • 100 g cheese (Emmental or medium-aged Gouda)
  • ½ tsp sweet paprika powder
  • ½ tbsp butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 220°C fan/convection oven. Rinse the chops in cold water. Pat dry with kitchen paper, then season with salt and pepper (use the salt sparingly, as the cheese is usually quite salty). Heat the clarified butter in a large pan. Add the chops and fry until well browned on both sides. Remove from the pan and place side by side in a suitably sized ovenproof dish. Finely grate the cheese and spread it over the chops. Sprinkle evenly with paprika and top with small knobs of butter. Bake in the preheated oven at 200°C fan/convection oven for about 10 minutes, until the cheese is melted and lightly browned. Serve with potatoes and a large bowl of mixed salad.
