Ingredients for 1 servings:
- 250 g flour (wholemeal rye flour)
- 300 g flour (wheat flour type 550)
- 150 g flour (rye flour type 1150)
- 2 tsp salt
- 1 sachet of yeast (dry yeast)
- 150 g walnuts
- 1 ½ tbsp vinegar
- 450 ml water

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
nice and hearty, goes perfectly with Munster cheese
Roughly chop the walnuts, sift the flour into a bowl, add the remaining dry ingredients, and mix thoroughly. Then add the wet ingredients and process with a food processor until a smooth yeast dough forms. Let it rest for 30-45 minutes, then knead again and transfer to a lightly oiled loaf pan. Cut the dough diagonally several times and let it rest for another 30 minutes. Bake in a preheated oven at 200°C for 55-60 minutes. Remove the bread from the oven and immediately brush the crust with a little water.
