Ingredients for 4 servings:

  • 200 g strawberries
  • 50 g sugar
  • 4 strawberries
  • 200 ml vodka (well chilled)
  • 200 ml champagne, or a good dry sparkling wine (well chilled)

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 40 minutes

Recipe from Belgium, cocktail with strawberries

Heat the strawberries with the sugar and simmer for 5 minutes. Purée with a hand blender and let cool. Divide the purée between cocktail glasses, preferably chilled. Carefully pour the vodka over the strawberry purée using the curved side of a spoon, ensuring it mixes with the purée as little as possible and remains very light in color. Top up with champagne and serve with a straw.
