Ingredients for 4 servings:
- 200 g glass noodles
- 400 g minced meat, mixed
- 2 bell peppers, red and green
- 2 m.-sized carrot(s)
- 6 tbsp lemon juice
- 2 tbsp oil
- 3 tbsp soy sauce
- salt and pepper
- Chinese spice
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Prepare the glass noodles according to the package instructions and cut them to the desired size using kitchen scissors. Cut the carrots into thin sticks and the green and red bell peppers into small cubes. Fry the minced meat in a little oil until crumbly and season with salt and pepper. Add the carrots and sauté for about 10 minutes. Then add the bell peppers and sauté for another 10 minutes. I like the dish to be firm to the bite. While the vegetables are cooking, mix the glass noodles with the lemon juice, oil, and soy sauce. Add the cooked vegetables to the minced meat and season with Chinese spice, salt, and pepper to taste. I personally use a little more Chinese spice, as I find it adds a special flavor. The salad can be served cold or lukewarm.
