Delicious homemade apple and apricot bread

Ingredients for 4 servings:

  • 500 g apples
  • 340 g flour
  • 1 tsp, heaped baking powder
  • 90 g hazelnuts, chopped
  • 90 g raisins
  • 90 g apricot(s), dried
  • 70 g brown sugar
  • 1 tsp cinnamon powder
  • 1 pinch of salt
  • 50 ml apple juice or milk or water or similar

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Peel the apples and slice them into small, thin pieces. Alternatively, you can grate them. It’s best to use apples with a lot of flavor; I like Braeburn. Also chop the apricots into small pieces. Combine the flour and baking powder and sift into a large mixing bowl (the bowl should be quite large so that you can knead the dough well without it all falling out). Then add the chopped hazelnuts, raisins, sugar, cinnamon, and salt and mix everything thoroughly. Then add the apples and apricots. Add apple juice or another liquid as needed (I use about 50 ml) until you have a sticky bread dough. Shape this into one or more loaves. For two loaves of roughly the same size, bake for about 60 minutes at 180°C (top/bottom heat, preheated).
