the best I’ve ever done!

First, add a little olive oil to the pan, but don’t let it get too hot, as it quickly develops bitter flavors that alter the taste. Then add the minced meat and break it up a bit. Dice the celery and add it to a second pan with olive oil, dice 1 carrot and add it too. Let the vegetables fry for 15 minutes until they soften, then chop the onions and add them. Once the minced meat is dark brown and well crumbled, add the vegetables. Meanwhile, cook the pasta in salted water. Deglaze the minced meat and vegetables with 1/8 l red wine. Add the pelati and let it simmer for a bit, then add the cream. Season with salt, pepper, and oregano to taste. Slice the mozzarella. Grease a baking dish with olive oil, add the cooked pasta, and pour the minced meat sauce over it, making sure all the pieces are covered. Distribute the mozzarella slices evenly. Bake in a preheated oven at 200°C on the middle rack until the cheese has reached the desired melting point.
