Dulce de leche ice cream

Ingredients for 1 servings:

  • 300 g condensed milk (milk jam, dulce de leche e.g. from Milchmädchen)
  • 5 egg yolks
  • 35 g sugar
  • ¼ tsp vanilla extract
  • 120 ml milk
  • 240 ml cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

almost like the original Häagen-Dazs!

Whisk the egg yolks with sugar until thick and foamy. Bring the cream, milk, and vanilla extract to a boil, then remove the pan from the heat. While stirring, pour a little of the hot milk and cream mixture into the egg yolk mixture, then return the entire egg yolk mixture to the pan with the hot milk and cream mixture. Return the pan to the heat and heat gently, stirring, until the mixture thickens enough to coat a wooden spoon. Mix the mixture with 200g of dulce de leche and chill. Then freeze the cold cream in the ice cream maker. Finally, depending on your taste, swirl 100-200g of dulce de leche into the creamy ice cream mixture with a spoon and freeze the ice cream.
