Elderberry Vinegar Cream

Ingredients for 1 servings:

  • 500 ml balsamic vinegar, dark
  • 400 g elderberries
  • 250 g brown sugar
  • 4 grains allspice
  • 3 carnations
  • 1 stalk(s) cinnamon
  • 1 tsp, levelled honey, to taste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

a delicious balsamic variation

Heat the balsamic vinegar and sugar slowly, stirring constantly, until the sugar dissolves. Place the spices in a tea bag or spice strainer, add it to the pot, and simmer gently for 5 minutes, stirring occasionally. Then add the elderberries and simmer for another 10 minutes. If you like the cream a little sweeter, stir in 1 teaspoon of honey. Discard the spices and let the mixture cool. Then strain through cheesecloth and bottle.
