Elderflower sparkling wine

Ingredients for 1 servings:

  • 10 elderflower heads
  • 4 lemons, untreated, sliced
  • 700 g sugar
  • 5 liters of water

Instructions

Working time approx. 20 minutes; Rest period approx. 20 days; Total time approx. 20 days 20 minutes

Combine the elderflower heads, lemon slices, and sugar in a large bowl and pour in the water. Stir well and let the bowl (with the lid on) stand for 2-3 days, stirring occasionally. When a light foam forms, strain the liquid through a sieve and bottle (not plastic bottles, which won’t withstand the pressure). Seal tightly and store in a cool place for about 10 days. After that, the sparkling wine is ready. It will keep for about 2 months, but it should be kept cool and, most importantly, served chilled. Warning: Not for children!
