Endive salad with grapefruit

Ingredients for 1 servings:

  • ½ head of endive lettuce
  • 1 pink grapefruit(s)
  • ½ lemon(s), juice
  • some salt and pepper
  • 1 tbsp xylitol (sugar substitute) or erythritol
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar, apple cider vinegar or alkaline 1/2 lemon more

Working time approx. 15 minutes; Total time approx. 15 minutes

one of my favorite salads, also alkaline

Trim and wash the endive. Drain the lettuce thoroughly and place it in a bowl. Peel the grapefruit completely, including the white part and the skin. Fillet the grapefruit by making a slit on both sides of the skin with a sharp knife and scooping out the flesh. Cut the fillets into small pieces and add them to the salad. Add the remaining ingredients and mix well to dissolve the sugar. This salad is sufficient as a side dish for 2-3 people.
