Endive salad with orange and grapefruit

Ingredients for 2 servings:

  • ½ endive salad, possibly a whole one, depending on the size
  • 2 oranges
  • 1 grapefruit(s)
  • 1 tbsp lemon oil
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • 1 pinch of salt
  • 1 pinch of pepper
  • some chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

A fresh kick with a citrus note.

Clean the endive and cut into thin strips. For the dressing, segment the orange and grapefruit and squeeze the juice from the second orange. Mix together the apple cider vinegar, lemon oil, orange juice, maple syrup, salt, and pepper. Wash the chives and finely chop them. Transfer the salad to a bowl, arrange the orange and grapefruit segments on top. Pour the dressing over the salad and sprinkle with the chives.
