Exotic tomato sauce

Ingredients for 4 servings:

  • 2 onions
  • 1 garlic clove(s)
  • 500 g tomatoes
  • 30 g fresh ginger
  • 2 tbsp oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika powder
  • 1 tsp turmeric
  • 400 ml coconut milk
  • 800 g gnocchi
  • 2 tbsp coriander or flat parsley
  • 30 g peanuts, roasted
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the onions and garlic. Dice the tomatoes (they should be about 2 cm in size). Heat the oil in a pan and fry the onions until light brown. Add the garlic and ginger and fry. Add the cumin, coriander, paprika, and turmeric. Now add the tomatoes and coconut milk and season with salt. Cover and simmer over medium heat for about 10 minutes. Cook the gnocchi according to the package instructions. Season the sauce to taste and toss it with the gnocchi. Sprinkle with coriander or flat-leaf parsley and roasted peanuts. I’ve only tried the sauce with gnocchi so far, but I think it would also go well with rice or pasta.
