Ingredients for 1 servings:
- 3 egg yolks
- 1 tbsp lemon juice
- 1 tbsp crème fraîche
- 175 g butter
- salt and pepper

very quick and idiot-proof without a water bath!
Whisk the egg yolks with the lemon juice in a tall bowl, season lightly with salt and pepper. Melt the butter. Blend the egg mixture with a hand blender, gradually adding the melted butter. Continue blending for a bit longer. Don’t swirl the hand blender back and forth; pull it up and down continuously! If desired, stir in a tablespoon of crème fraîche. Season to taste with salt and pepper.
