Ingredients for 4 servings:

  • 4 slices of farmhouse bread
  • 150 g bacon, streaky, diced
  • 2 tbsp oil
  • 300 g onion(s), half rings
  • 150 g leek
  • 1 garlic clove(s)
  • 1 bunch of chives
  • 120 g mountain cheese or Emmental, grated
  • 2 eggs
  • Salt and pepper, freshly ground
  • nutmeg
  • Caraway, freshly ground, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Fry the bacon in oil. Add the onion rings and the thinly sliced ​​leek. Press the garlic clove over the bacon and sauté for 10 minutes over medium heat. Let cool. Cut the chives into small rings and add them. Mix the grated cheese, eggs, salt, pepper, nutmeg, and caraway seeds (you can also omit them) into the bacon and onion mixture. Place the bread slices on a baking sheet lined with baking paper and spread the mixture on top. Bake in a preheated oven at 180°C (top/bottom heat) on the middle rack for about 20 minutes until golden brown.
