Feta and tomato omelette

Ingredients for 1 servings:

  • 4 eggs
  • 100 g feta cheese
  • 50 g cherry tomatoes
  • 30 g diced ham
  • 1 tbsp butter
  • Salt
  • pepper

Whisk the eggs and cut the feta cheese into small cubes. I recommend using cow’s milk cheese, as it’s a bit milder. Quarter the cherry tomatoes. Dice the ham, too, or buy it directly in cubes. Melt the butter in a pan over high heat. Once the butter has melted, briefly fry the ham cubes in the pan and reduce the heat to medium. After about 30-60 seconds, add the eggs and then spread the tomatoes and feta cheese evenly over the mixture. Now cover the pan and let the mixture cook or fry for about 6 minutes with the lid on. Serve the omelet and season with salt and pepper. The ham cubes mean less salt is needed.
