Fillet steak on rösti

Ingredients for 6 servings:

  • 80 g clarified butter
  • 700 g tomatoes
  • 6 beef fillet steaks, 125 g each
  • Salt and pepper from the mill
  • 300 g cream cheese with herbs
  • 2 tbsp crème fraîche
  • 1 bunch parsley, flat
  • 2 onions

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In addition to the above ingredients, add 2 packages of frozen rösti (300g each). Preheat the oven to 250°C (gas mark 5-6, fan oven 6-8 minutes at 250°C). Fry the rösti (still frozen) in a pan with 50g of clarified butter for 4 minutes on each side. Wash the tomatoes, remove the stems, and slice them. Place the fried rösti on a baking tray. Season the fillets with salt and pepper, and fry in the remaining clarified butter over high heat for 2 minutes on each side. Top each rösti with 3 tomato slices and place the fillets on top. Mix the cream cheese with the crème fraîche and spread it on the steaks. Bake the steaks in the oven on the top rack for 6 minutes. Garnish the dinner plates with the remaining tomato slices, season with salt and pepper. Finely chop half of the parsley. Peel and finely dice the onions, and add them to the tomatoes. Sprinkle the chopped parsley over the tomatoes. Garnish the rösti with parsley leaves.
