old family recipe
Wash the raisins, drain them, and dry them on kitchen paper. Set them aside. Beat the eggs with the sugar and salt until frothy, then add the lemon flavoring. Stir in the flour mixed with the baking powder alternately with the milk. Finally, fold in the dried raisins. Heat the fat in a pan. Now drop spoonfuls of batter into the pan, pressing them down lightly. The batter should be the size of your palm—no larger. Fry the fritters until golden brown on both sides, drain briefly on kitchen paper, and serve while still hot. These fritters are an old family recipe. We often had them as our main meal for lunch. They can also be eaten cold, dusted with powdered sugar.
