Ingredients for 1 servings:

  • 200 g butter, room temperature
  • 60 g sugar
  • 1 pinch of salt
  • 1 egg yolk, class M
  • 1 tbsp water, lukewarm
  • 5 drops of bitter almond flavor
  • 300 g wheat flour type 405
  • 1 egg yolk, class M
  • some sugar for sprinkling

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

Beat 100g butter, sugar, salt, 1 egg yolk, water, and bitter almond flavoring with a hand mixer until fluffy. Stir in the remaining butter, incorporate the flour, and refrigerate the dough for one hour. Roll out the dough on a floured surface to a thickness of approximately 6-8mm. Use a pastry wheel to cut out different sizes and shapes. Mix 1 egg yolk with 1 teaspoon of water and brush the dough pieces with it. Sprinkle with the sugar. Place on a baking tray lined with baking paper. Preheat the oven to 200°C (top/bottom heat) and bake the cookies on the middle rack for approximately 15 minutes, until they begin to brown slightly. Let cool on a wire rack.
