An old Silesian dish from my mother-in-law
Peel the potatoes, cut into cubes and place in a pot. Peel and quarter the onion and add it with the spices. Now fill with water until the potatoes are just covered. Finally, place the thick slice of mixed bread on top of the potatoes. Put the lid on the pot and let it cook until the potatoes are soft. The bread will cook and make everything a little creamy and very, very slightly sour. Now remove the pot from the heat and mash everything with a potato masher, not too finely; there should still be potato pieces. If it is now too thick, add a little more water. Cut the bacon into cubes, fry in a pan and add to the potatoes. Add vinegar according to taste, for a pleasant acidity. Fry the eggs. The dish is eaten from deep plates and a fried egg is placed on top of the potatoes. It’s quick, inexpensive and is enjoyed by the whole family.
