Flatbread pizza with ajvar bolognese

Ingredients for 4 servings:

  • 1 flatbread(s)
  • 250 g minced beef
  • 1 bunch of spring onions
  • 1 clove(s) garlic
  • 1 tbsp olive oil
  • 1 tbsp Ajvar, spicy or mild
  • 1 tube(s) Tomato paste
  • 1 onion(s), red, small
  • 100 g feta cheese
  • salt and pepper, pepper
  • n.e. pepper(s), corn, pickled pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 21 minutes

Preheat the oven to 200°C (top/bottom heat). Finely slice the spring onion, peel the garlic, and chop very finely. Peel the red onion, halve it, and slice it into thin strips. Dice the feta cheese. Heat the olive oil in a pan, first fry the spring onion over medium heat until translucent, then add the ground beef and garlic and fry for about 3-4 minutes, stirring. Remove the pan from the heat and season the ground beef mixture with 1 tablespoon of tomato paste, ajvar (mild or spicy to taste), salt, and pepper. Cut the flatbread in half crosswise (like slicing a roll). Place the two flatbread halves on a baking sheet and spread with tomato paste (just thinly, depending on your taste, or—we like it—a nice and thick layer). Spread the ground beef mixture on the flatbread, then top with the onion strips and feta cubes. If you like, you can top the pizza with strips of bell pepper, pickled pepperoni, corn, or something similar. Bake the flatbread pizza in the oven for about 5-6 minutes. Serve with a green salad. The flatbread pizza is also delicious cold the next day.
