Ingredients for 4 servings:
- 60 g flaxseed
- 180 g oat flakes
- 80 g dried apricots, diced
- 600 ml almond milk (almond drink), shaken well
- 400 g strawberries, halved if desired
- 40 g almonds, coarsely chopped
- e.g. honey, liquid
- 3 stalks of lemon balm, leaves plucked
Instructions
Working time approx. 15 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 15 minutes
Coarsely grind half of the flaxseed in a grain mill the night before. Then mix with the oats and divide between four screw-top jars. Top with the diced apricots and sprinkle with the remaining flaxseed. Pour over the almond milk, seal the jars, and refrigerate overnight. Then top with strawberries and almonds, drizzle with honey, and sprinkle with lemon balm leaves to serve.
