Ingredients for 4 servings:

  • 400 g chicken breast
  • 150 ml instant chicken broth
  • 250 g pasta shells
  • Salt
  • ½ cucumber(s)
  • 1 onion(s), red
  • 145 g corn, from the can
  • 150 g mayonnaise
  • 3 tbsp white wine vinegar
  • 1 tbsp parsley, chopped
  • 1 tbsp apricot jam
  • pepper
  • e.g. salad, for garnishing

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 40 minutes

Rinse the chicken breast, cover, and simmer in the broth over low heat for 10 minutes. Let cool, then set the broth aside. Cook the pasta in salted water according to the package instructions. Rinse in cold water. Meanwhile, wash and dice the cucumber. Peel the onion and slice it into strips. Drain the corn and rinse. Dice the chicken. Mix the mayonnaise, vinegar, parsley, and jam with a little broth. Season with salt and pepper. Mix all prepared ingredients with the dressing. Let the salad stand for 30 minutes, then arrange on lettuce leaves.
