French toast with mushroom ragout

Ingredients for 4 servings:

  • 500 g mushrooms
  • 2 small onions
  • oil
  • 250 ml vegetable stock
  • Sauce thickener, light
  • 2 tsp thyme, dried
  • salt and pepper
  • 2 eggs
  • 250 ml milk
  • 30 g Parmesan, grated
  • 8 slices of white bread
  • 250 g cream

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Clean the mushrooms and cut them in half. Dice the onions and sauté them in a little oil. Add the mushrooms and fry them. Deglaze with stock and cream and bring to a boil. Add a sauce thickener (if desired) and bring to a boil. Season with thyme, salt, and pepper. Mix the eggs, Parmesan cheese, and milk and season with salt and pepper, if desired. Toss the white bread slices in the mixture. Heat oil in a pan and fry the white bread slices. Serve with the mushroom ragout.
