Fresh Salad with Scampi`s (lukewarm)

The perfect fresh salad with scampi`s (lukewarm) recipe with a picture and simple step-by-step instructions.

the dressing

  • 2 piece Steamed chicory
  • 2 piece Pak Choi (mustard cabbage) steamed
  • 3 piece Garlic cloves
  • 1 piece Freshly cooked onion
  • 3 piece Vine tomatoes
  • 1 piece Cucumber fresh
  • Various cress sprouts
  • Various mung sprouts
  • 5 tablespoon Balsamic or banana vinegar (from my KB)
  • 5 tablespoon Olive oil
  • 1 tablespoon Maple syrup
  • 1 teaspoon Espelette pepper
  • 4 cl. Osbourne Veterano
  • Sea salt from the mill
  • Lime zest

additional spices for the vegetables to be braised

  • Pepper and salt
  • Smoked paprika
  1. You start with this salad by preparing the dressing. Put all the ingredients in a shaker and mix them well. Put it in the refrigerator so that the dressing can mature.
  2. Next, put the scampi (if they are freshly made) in a pan with a little olive oil. Sweat briefly and then deglaze with a cup of water. Put the lid on the pan and take it off the heat – let it steep for about 5 minutes. Then free the scampi from their tanks.

Note on the seafood

  1. It’s faster – if you buy pre-cooked scampi – but I find the taste of convenience or vacumed pre-cooked scampi less intense.
  2. When the scampi are cooking, they start to steam the vegetables (chicory and mustard cabbage). Season the vegetables with pepper, salt and smoked paprika. Braise the vegetables for a maximum of 3 minutes – then let them cool and cut into bite-sized pieces.
  3. Take a saucepan and add the diced onion, garlic and a little olive oil. Season with smoked paprika and a little salt and lightly sear. Turn off the heat and then toss the diced tomatoes in it.

Now for the final spurt

  1. Now put all the prepared ingredients in a large salad bowl – mix it well and distribute it in portions on plates. Then shake the dressing well again and pour it over the salad. Last but not least, let the scampi fall over it – done!
  2. If you like it – (like me) add sprouts and cress on top. I serve homemade baguette with it. I hope you enjoy cooking and enjoy your meal.
