Ingredients for 2 servings:
- 1 jar brown beans (large jar or can)
- 4 slices of organic bacon, about 1.5 cm thick
- 3 large onions, sweet, roughly chopped
- 2 garlic cloves, chopped
- 1 tsp savory, dried
- 1 tbsp peanut butter or cream
- 1 tbsp olive oil
- some salt and pepper, black from the mill
- 1 jar applesauce (organic)
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes
Here in Holland it is called “Speklapjes met bruine bonesen en appelmoes”
First, place the bacon slices in a pan (without oil or butter; the bacon is fatty enough) over a relatively low heat. They only need to cook slowly for about 20 minutes (with the lid on the pan). Turn occasionally. In the meantime, sauté the onions and garlic in the olive oil. They should only get a slight browning. Then add the drained beans and savory. Mix, cover, and sauté over low heat for about 10 minutes. Increase the heat slightly (not too much) for the bacon and slowly cook uncovered until nice and brown and crispy. Now season with salt and pepper, cut into large pieces, and add to the beans. Carefully stir in a dollop of peanut butter, and you’re done. Serve with applesauce. White cabbage salad or carrot and apple salad would also go well with this dish.
