Fried chicken strips on leaf salad

Ingredients for 2 servings:

  • 500 g chicken breast fillet(s) (turkey breast)
  • 1 egg(s)
  • Salt, flour, breadcrumbs
  • Salad (various leaf salads)
  • 3 tbsp oil
  • 3 tbsp vinegar
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Remove the skin and bones from the chicken breast and cut into bite-sized strips. Beat the egg in a deep plate and season with salt. Coat the pieces of meat, one at a time, in flour, egg, and breadcrumbs (to coat), then fry in hot oil. It takes about 5-10 minutes until they are nicely browned. Meanwhile, wash the lettuce, arrange it on a plate, and toss with salt, vinegar, and oil (just before serving to keep it crisp). Remove the meat from the pan, drain briefly on kitchen paper, and then arrange it on top of the lettuce. Fresh baguette goes wonderfully with this.
