Ingredients
- 200 g Chorizo sausage
- 700 g Jacket potatoes
- 200 g Red peppers
- 1 Fresh shallot
- 1 tbsp Rapeseed oil
- Salt and pepper
- Sweet paprika powder
- 4 Eggs
- 0,25 bunch Chives fresh
Instructions
- Cut the chorizo into 1cm thick slices and fry them in a coated pan without fat for 2-3 minutes, then remove them, put the pan with the chorizo fat aside, peel off the shallot and cut into fine cubes. Halve, core, wash and cut the peppers into strips. Cut the chives into small rolls.
- Peel the potatoes and cut into slices, fry them in the chorizo fat for about 5 minutes until golden brown on both sides, add a little rapeseed oil if necessary. Mix in the shallot and paprika and fry for 3-4 minutes, then add the chorizo again. All with salt and pepper and paprika powder.
- Arrange fried potatoes with chorizo and paprika on plates. Serve with quail or normal fried eggs and sprinkled with chives.
