  • 200 g Chorizo ​​sausage
  • 700 g Jacket potatoes
  • 200 g Red peppers
  • 1 Fresh shallot
  • 1 tbsp Rapeseed oil
  • Salt and pepper
  • Sweet paprika powder
  • 4 Eggs
  • 0,25 bunch Chives fresh


  • Cut the chorizo ​​into 1cm thick slices and fry them in a coated pan without fat for 2-3 minutes, then remove them, put the pan with the chorizo ​​fat aside, peel off the shallot and cut into fine cubes. Halve, core, wash and cut the peppers into strips. Cut the chives into small rolls.
  • Peel the potatoes and cut into slices, fry them in the chorizo ​​fat for about 5 minutes until golden brown on both sides, add a little rapeseed oil if necessary. Mix in the shallot and paprika and fry for 3-4 minutes, then add the chorizo ​​again. All with salt and pepper and paprika powder.
  • Arrange fried potatoes with chorizo ​​and paprika on plates. Serve with quail or normal fried eggs and sprinkled with chives.
