Pour the fruit juice into a saucepan. Heat the juice to approximately 80°C and stir in the gelatin. After one minute, add the sugar or honey. If you prefer it sweeter, you can use both. Add the fruit pulp. If you like a slightly bitter aftertaste, you can also add grated orange, lemon, or lime peel. Stir continuously over low heat. After about two minutes, strain the juice through a sieve and filter out the peel and pulp. If you prefer the latter, you can leave it in, but cut it into smaller pieces. Pour the warm juice into ice cube trays and refrigerate. Depending on the gelatin and the size of the trays (deep trays take longer than shallow ones), it will set in 1-8 hours. The temperature of the refrigerator also plays a role. Tip: If you want to make ice cream, leave out the gelatin and pour the juice into ice cube trays, perhaps with a stick.
