Ingredients for 4 servings:
- 100 g mascarpone
- 100 g natural yogurt
- 100 g cream
- 1 tbsp lemon juice
- 250 g mixed fruits (frozen fruits are also possible, e.g. raspberries and blueberries)
- 1 tbsp lemon juice
- 100 g speculatius biscuits
- n. B. Mint leaves for decoration
- e.g. cinnamon powder or cocoa powder for decoration

without added sugar
Using a hand blender, puree the fruit (except for a few nice pieces for later decoration) along with the lemon juice. If using frozen fruit, you should either thaw it or add a tablespoon of hot water to the blender to make it easier to puree. Whip the cream until stiff, then mix the yogurt and mascarpone in a bowl with the lemon juice, and finally fold in the whipped cream. Roughly break the speculatius biscuits into small pieces. Now layer everything in a pretty glass, starting with the mascarpone cream, then adding some of the speculatius biscuits, and then the pureed fruit. The liquid from the biscuits will soften the biscuits later. Then add more cream, and so on, until all the ingredients are used up. Finish with a dollop of mascarpone and finally drape the previously set aside fruit. If you like, you can add a mint leaf or decorate the whole thing with a little cinnamon or cocoa powder.
