Fruity-spicy radicchio salad

Ingredients for 4 servings:

  • 1 radicchio
  • 2 grapefruits
  • 2 kiwis
  • 1 onion(s), red
  • 1 tbsp mustard
  • 3 tbsp crème legère or crème fraîche
  • 1 tsp harissa
  • 6 tbsp orange juice
  • 2 tbsp cane sugar (raw cane sugar)
  • n. B. Sea salt, from the mill
  • 6 tbsp sesame oil
  • 3 tbsp capers

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Radicchio with grapefruit and kiwi, with a fruity, spicy marinade

Halve the radicchio, remove the stalk, and wash it. Cut into strips and place in a large bowl. Peel the red onion, halve it, and slice it into thin rings, then add it to the bowl. Peel the kiwi, halve it lengthwise, and slice it into thin slices. Add it to the bowl with the other ingredients. Peel the grapefruit and cut out the segments over the bowl. Squeeze the rest of the grapefruit over the bowl. For the marinade, whisk together the mustard, crème légère, harissa, raw cane sugar, orange juice, and salt in a small bowl. Gradually add the sesame oil and stir until a fine emulsion forms. Toss the salad well and pour the marinade over it. Arrange on flat plates and garnish with the capers.
