Fruity tomato chutney

Ingredients for 1 servings:

  • 1,500 g tomatoes, fully ripe
  • 250 g onion(s)
  • 300 g seedless grapes
  • 250 g banana(s)
  • 2 chili peppers
  • 4 tbsp oil
  • 200 ml vinegar (red wine vinegar)
  • 200 g brown sugar
  • Salt
  • Pepper, freshly ground
  • Cinnamon
  • Ginger powder

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Score the tomatoes crosswise, blanch them in boiling water, and peel off the skin. Cut the tomatoes into thin wedges, removing the seeds. Peel the onions and also cut them into strips. Halve the grapes and finely chop the chili peppers. Note: If you don’t want the dish to be too spicy, remove the chili seeds first! Heat the oil and let the onions become translucent. Add the remaining ingredients, except the bananas, and simmer over medium heat for about 45 minutes. Then halve the bananas lengthwise, slice them, and add them. Cook for another 15 minutes. Pour the mixture into the prepared jars while still hot and seal immediately.
