Ingredients for 3 servings:

  • 1 kg sweet potatoes, cassava or yams
  • 1 kg banana(s) (plantains), peeled
  • 1 pinch of salt

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel the tubers and, if necessary, cut into pieces or slices. Cook in salted water, then puree with the bananas in a blender. Now put a part of the dumpling into a wet bowl for each person, shape the dumpling into a smooth ball, serve with palm nut sauce, for example, and eat with the RIGHT hand (WITHOUT CUTLERY!!!!) There is a second option: Since cassava, sweet potatoes, or yams are not available everywhere in Europe, resourceful West Africans have invented a halfway satisfactory substitute recipe: Ingredients: Cornstarch: 2.5 cups, mashed potato powder: 2.5 cups, boiling water: 6 cups Preparation: Put 4 cups of water in a large, heavy pot. Add the starch/mashed potato powder, stirring constantly (best with a wooden spoon), then add the remaining water until a lumpy dumpling forms. Now you put a part of the dumpling into a wet bowl for each person, form the dumpling into a smooth ball, serve with e.g. palm nut sauce and eat with the RIGHT hand (WITHOUT CUTLERY!!!!) (I have also included a recipe for palm nut sauce)
