Ingredients for 8 servings:

  • 500 g mascarpone
  • 5 tbsp Cointreau or other orange liqueur
  • 7 tbsp milk or water
  • 500 ml whipped cream
  • 250 g amaretti biscuits
  • 500 g raspberries, frozen
  • n. B. Chocolate shavings or sprinkles for decoration
  • 1 pack of orange peel flavoring or grated orange peel
  • 5 tbsp milk additionally (possibly up to 7 tbsp)
  • 5 tbsp elderflower syrup

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Mascarpone with raspberries

Mix the mascarpone, liqueur, and milk or water until smooth. Whip the cream until stiff. Roughly crumble the amaretti biscuits and set aside 3 tablespoons. Mix the mascarpone and cream until lightly creamed. Fold in the amaretti biscuits and a good 2/3 of the frozen raspberries. Immediately pour into a bowl or serving glasses and let stand for 2-3 hours, until the raspberries have just thawed. Sprinkle the cream with the remaining amaretti biscuits and raspberries before serving. Sprinkle with chocolate sprinkles, if desired. It tastes best when the raspberries are still slightly frozen, so prepare it 2-3 hours in advance, not the morning before or the day before. (This will be a very large bowl; in my picture, I made half the amount, so it’s only a “small” bowl full.) Non-alcoholic alternatives: Alternative 1: Omit the liqueur, add a little more water or milk, and stir in 1 sachet of Finesse orange peel or freshly grated orange peel for flavor. (This is how I make the cream when children are eating.) Alternative 2: Replace the liqueur with elderflower syrup (this is what the recipe says, but I’ve never tried it).
