Ingredients for 1 servings:

  • 200 g butter
  • 150 g sugar
  • 4 eggs
  • 5 tbsp milk
  • 2 tsp gingerbread spice mix
  • 2 tsp coffee powder
  • 300 g flour
  • 1 packet of baking powder

Instructions

Preheat oven to 200°C and grease muffin tins well. Beat butter and sugar until fluffy. Gradually add eggs, followed by the milk, and beat briefly. Add gingerbread spice, coffee powder, flour, and baking powder and stir gently; do not overbeat. Pour batter into the muffin tins and bake for approximately 20-25 minutes at 175°C fan-assisted oven.
