Ingredients for 4 servings:
- 1 tbsp butter
- 2 tbsp flour
- 400 ml meat broth
- 200g Gorgonzola
- 250 ml sweet cream
- 1 bunch of chives
- salt and pepper
- 1 pinch of nutmeg
- 1 tbsp cognac
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Melt butter in a saucepan and sauté flour until light yellow. Add the stock while stirring and simmer over low heat for 15 minutes, stirring occasionally. Blend the Gorgonzola with the cream until smooth. Wash the chives and finely chop them. Stir the creamed cheese into the sauce and do not return to a boil. Season to taste with salt, pepper, nutmeg, and 1 tablespoon of cognac, if desired. Serve with green pasta or spinach gnocchi.
