Ingredients for 1 servings:
- 1 slice(s) of toast (wholemeal toast)
- some salad cream for spreading
- some cooked chicken (e.g. leftovers from a roast chicken)
- 1 tomato(s)
- arugula
- Parmesan, in a piece
- some balsamic vinegar, old
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Spread the salad cream on the toasted, still-warm toast, then top with the chicken and tomato slices. Chop the arugula into small pieces and place it on top of the meat. Grate some Parmezzan cheese over the top (this works well with a vegetable peeler!) and serve drizzled with a little aged balsamic vinegar. (I used a spray bottle for this.) Delicious!
