Grandma's Dutch carrot mash

Ingredients for 4 servings:

  • 1,000 g carrot(s), cleaned, cut into thick slices
  • 300 g onion(s), finely chopped
  • 500 ml water
  • 1 tsp sugar
  • 600 g potatoes, peeled, washed, quartered
  • 75 g bacon, fat, finely diced
  • salt and pepper
  • 1 tsp lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring water to a boil with sugar and a little salt. Cover and cook the carrots and onions. Boil the potatoes in salted water in a second pot. Reserve the cooking water. Slowly fry the bacon in a pan. Remove the cracklings. Mash the cooked carrots and onions, including the cooking liquid, in the pot. Add the potatoes and mash them together. Add the bacon fat and stir well. If the stew is too thick, add a little of the potato water. Season with salt and pepper. Taste and add lemon juice. Serve with traditional Dutch meatballs. Since my great-grandmother lived in Holland for many years, she prepared many dishes the Dutch way.
