Grandma's style cauliflower

Ingredients for 4 servings:

  • 1 cauliflower
  • 3 eggs
  • 1 bunch of parsley
  • Salt
  • 3 tbsp lemon juice
  • 220 g butter
  • 75 g breadcrumbs
  • pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

That’s how my grandma made it.

First, clean the cauliflower and remove the stalk. Boil the eggs hard for 10 minutes, then rinse and peel. Dice the egg whites and pass the yolks through a sieve. Finely chop the parsley. Bring a large pot of salted water to a boil, add the lemon juice, and cook the cauliflower for about 20 minutes. Meanwhile, in a pan, soften the breadcrumbs with butter and sauté over medium heat. Add the parsley and egg whites and season with the spices. Remove the cauliflower from the water, drain well, and finally drizzle with the butter, sprinkle with the egg yolk, and serve immediately.
