Ingredients for 1 servings:

  • 150 g oat flakes or spelt flakes, preferably whole
  • 50 g pumpkin seeds, sunflower or pine nuts
  • 50 g walnuts, almonds, hazelnuts
  • 100 g honey, or agave syrup, maple syrup
  • ¾ tsp salt
  • ½ tsp spice(s), e.g. vanilla and cinnamon
  • 40 g oil

Working time approx. 5 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Mix any flakes you like with the nuts, a sweetener like honey, oil, salt, seeds, and spices. Mix all ingredients in a large bowl until no large lumps remain. Preheat the oven to 160°C fan/convection oven or 180°C conventional oven. Spread the sticky mixture on a baking tray lined with baking paper and bake for about 20 minutes. Turn once after about 10 minutes. Bake a little longer depending on the desired degree of browning; this is a matter of taste. It’s normal for the mixture to still be a little sticky when you take it out of the oven. Once cooled, however, it’s wonderfully crispy, and the larger chunks can be easily crumbled apart. This creates the portionability typical of muesli.
