Grapefruit iced tea with ginger and thyme

Ingredients for 4 servings:

  • 600 ml grapefruit juice, freshly squeezed
  • 200 ml lemon juice, freshly squeezed
  • 100 g brown sugar
  • 100 g coconut blossom sugar
  • 15 g ginger root
  • 3 sprigs of thyme
  • 1 liter black tea
  • 1 grapefruit(s)
  • 1 handful of thyme sprig(s)
  • Gin, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

In a saucepan, mix the grapefruit juice and lemon juice with the brown sugar and coconut blossom sugar. Peel and roughly chop the ginger, and add it. Bring everything to a boil and simmer for 15-20 minutes. Filter out the ginger and pour the syrup into boiled bottles. I used bottles that hold about 300 ml, which meant I was able to fill three bottles. Add a sprig of thyme to each bottle, seal it, and refrigerate. Simply bring the black tea to a boil. I make it completely sugar-free. If you like it sweeter, you can add more sugar. To make the iced tea, simply mix 1/3 syrup with 2/3 black tea and fill the glass with ice cubes. Serve garnished with grapefruit slices and thyme. Optional: If you’d like your iced tea to kick it up a notch, you can pimp it up with a bit of gin. Gin tastes wonderful with it.
