Gratinated leaf spinach and dumpling casserole

Ingredients for 3 servings:

  • 340 g leaf spinach, frozen
  • e.g. salt and pepper
  • 200 ml milk
  • 200 g cream cheese spread
  • 1 tbsp roux, classic, light
  • 1 pack of dumplings (mini dumplings) or roll them yourself from potato dumpling dough from Hengelein
  • n. B. Ham cubes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Drain the thawed spinach leaves and season generously with salt and pepper. Bring the milk to a boil, add the cream cheese, and stir until smooth. Stir in the roux and cook for 1 minute. Season with salt and pepper to taste. Place the spinach in the casserole dish and top with the dumplings, evenly distributed. If you like, add diced ham, then pour the cheese sauce evenly over the spinach and bake in a preheated oven at 200°C (175°C fan-assisted oven) for about 30 minutes. Double the batch and make it on a baking sheet, easily serving 4-5 people. The 521 calories per serving do not include the diced ham; you may need to add these.
