Greek herb schnitzel with feta cheese

Ingredients for 4 servings:

  • ½ bunch thyme
  • ½ bunch oregano
  • 2 cloves garlic
  • 4 pork schnitzels
  • olive oil
  • salt and pepper
  • 200 g feta cheese
  • Flour, for turning

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

A quick and tasty dish that can also be made on the grill.

Wash the herbs and pick off the leaves. Finely slice the garlic. Place the schnitzel in a freezer bag with the herbs and garlic and 3-4 tablespoons of olive oil and marinate for about 2 hours. Halve the feta cheese, first horizontally and then crosswise, to create 4 equal, thin slices of cheese. Coat the cheese in flour. Lightly pat the schnitzel dry, season with salt and pepper, and fry on each side. Remove the schnitzel from the pan, wrap in aluminum foil, and let rest. Briefly fry the feta cheese slices on both sides in the hot frying fat from the schnitzel. Arrange the schnitzel on plates and place the cheese slices on top. A Greek farmer’s salad and baguette go perfectly with this.
