  • 5 cloves garlic
  • 3 tbsp olive oil
  • 2 tbsp vinegar
  • 1 tsp pepper
  • 1 tsp salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

from Corfu without curd or cream

Crush the garlic cloves and add them to the yogurt. Peel and grate the cucumber and place them in a separate bowl. Sprinkle the salt on the cucumbers and let them sit for a few minutes to release the water. Then squeeze the cucumber and add it to the yogurt. Mix everything with pepper, olive oil, and vinegar. It’s important to squeeze the cucumbers, otherwise it will be too runny. The secret lies in the yogurt, which is often available in Turkish supermarkets. Let everything sit well and enjoy.
