Ingredients for 4 servings:

  • 8 slice(s) bacon, streaky
  • 55 g breadcrumbs, fresh
  • some lettuce leaves
  • 8 eggs
  • 12 olives, black
  • 1 tbsp mustard, grainy
  • 2 tbsp white wine vinegar
  • 6 tbsp extra virgin olive oil

Hard-boil the eggs and quarter them. Dice the bacon and tear the lettuce leaves into pieces. Heat 1 tablespoon of oil in a pan and fry the bacon for about 5 minutes until crispy. Remove the bacon and fry the breadcrumbs over high heat until golden and crispy. Arrange the lettuce leaves in a bowl and add the olives, eggs, and bacon. Mix together the vinegar, remaining olive oil, mustard, salt, and pepper and pour over the salad. Mix everything together, sprinkle with breadcrumbs, and serve immediately.
