Ingredients for 4 servings:

  • 4 pork chops
  • 6 tbsp oil (olive oil)
  • 1 lemon(s), the juice
  • pepper
  • 1 tbsp oregano, freshly chopped
  • 2 cloves garlic
  • Salt

Pork chops are just as popular in Greece as grilled lamb chops. Instead of oregano, as in this recipe, you can also use 5 fresh sage leaves. Wash the chops and pat dry. Whisk the olive oil with the lemon juice and pepper. Mix the oregano into the lemon and oil sauce. Peel the garlic cloves and press them with a garlic press. Add the garlic to the sauce. Brush the chops with the sauce and let them marinate in the refrigerator for 1 hour. Then pat the chops dry and score the edges every 2 cm so they stay straight while grilling. Cook the chops on the hot grill for about 8 minutes on each side. Season with salt and serve hot.
