Grilled spare ribs

Ingredients for 4 servings:

  • 1 kg pork ribs
  • 125 ml sherry
  • 500 ml sauce (tomato sauce)
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 3 cloves garlic, crushed
  • 1 tbsp ginger, freshly grated

Instructions

Working time approx. 45 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 45 minutes

Cut the ribs into 3 or 4-piece ribs. Mix the tomato sauce, sherry, soy sauce, honey, garlic, and ginger well in a large pot. Add the spare ribs to the mixture and bring to a boil. Simmer on medium heat in a covered pot for 15 minutes, turning the meat occasionally to ensure even heating. Transfer the ribs and sauce to a shallow, non-metallic bowl and let cool. Cover and let stand in the refrigerator for at least 3 hours (preferably overnight). After the marinating time, place them on a greased grill rack and grill for 15 minutes, turning occasionally and brushing with the sauce.
