Ingredients for 1 servings:

  • 300 g smoked bacon, streaky, not too hard
  • 1 small onion(s)
  • 1 garlic clove(s)
  • ½ tsp marjoram, dried
  • 1 bay leaf, preferably fresh
  • 1 pinch of salt
  • 1 tsp black peppercorns

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the smoked bacon into small pieces. Peel the onion and garlic and chop very finely. Mix everything in a bowl. Rub the marjoram over the bacon with your fingers. Finely grind the bay leaf and a pinch of salt in a mortar and pestle. Add the peppercorns and crush. Add the spices to the bacon and mix. Roughly puree the bacon mixture in a food processor or grind it through a grinder. Mix the minced meat again, transfer to screw-top jars, and cover and let it marinate in the refrigerator.
